Kirbis Suppe - Pumpkin Soup

2 tablespoons butter

1 tablespoon olive oil or pumpkin seed oil (optional)

1 bay leaf

1 medium onion, chopped

2 - 3 ribs of celery chopped

1/2 teaspoon ginger

2 tablespoons flour

2 cups prepared pumpkin

2 cups chicken stock

2 cups milk or heavy cream

1/2 teaspoon nutmeg

2 tablespoons honey

salt and pepper to taste

 In a soup pot, add oil and saute butter, onion, and celery.  Add ginger, bay leaf, salt and pepper.  Add flour and cook a minute or two.  Add chick stock and bring to a boil.  Add pumpkin and simmer until the soup is thickened.  Add the milk or cream, honey and nutmeg. 

When serving the soup, you can top it with some sour creme, toasted pumpkin seeds or a drizzle of pumpkin seed oil.

Sepp's Simple Carrot Cake - Karotten Kuchen

3 cups flour

3 cups sugar

2 tsps baking powder

2 tsps baking soda

2 tsps cinnamon

4 eggs

2 (71/2oz.) jars of baby junior carrots

1/2 cup oil

1 cup chopped walnuts or pecans

1 cup raisins (optional)

pinch of salt

 

Mix sugar and eggs.  Add oil. Sift flour, baking soda, baking powder and cinnamon.  Add carrots, nuts, raisins and salt.  Bake at 350 degrees for 1 hour in a bundt pan.

Ganz Einfach!

Baked Oatmeal

Mix together:

1/3 cup vegetable oil

½ cup brown sugar

1 egg

Add:

2 cups quick oats

1 tsp. baking powder

½ tsp. salt

¾ cup milk

Optional:

Dash ground cinnamon

½ tsp vanilla

 

After all ingredients are mixed together, pour in a shallow baking pan 8x8 inches and bake at 350 degrees Fahrenheit for 30 minutes.

Serve warm with milk or add fruit and milk.  Refrigerate leftovers and reheat in the microwave with milk.
